The ingredient of Lemon mint sauce

  1. 50g pine nuts
  2. 2 bunches mint (about 85g each), washed, dried, leaves picked
  3. 1 garlic clove, chopped
  4. 1 tbsp finely grated lemon rind
  5. 60ml (1/4 cup) fresh lemon juice
  6. 80ml (1/3 cup) extra virgin olive oil
  7. Salt & ground black pepper, to taste

The instruction how to make Lemon mint sauce

  1. Preheat oven to 180u00b0C. Spread the pine nuts over a baking tray and toast in preheated oven for 4-5 minutes or until golden. Transfer to a plate to cool slightly.
  2. Place the pine nuts, mint leaves, garlic, lemon rind and lemon juice in the bowl of a food processor. Process, scraping down the side of the bowl occasionally, until well chopped.
  3. With the motor running, slowly add oil in a thin, steady stream and process until the sauce is smooth. Taste and season with salt and pepper.
