The ingredient of Beef coconut curry

  1. 50g butter
  2. 2 brown onions, sliced
  3. 2 garlic cloves, crushed
  4. 2cm piece ginger, peeled, grated
  5. 1 1/2 tsp ground turmeric
  6. 1/2 to 1 tsp chilli powder, to taste
  7. 1/2 tsp ground fenugreek (see note)
  8. 2 tsp ground coriander
  9. 1 tsp cumin
  10. 2 tsp paprika
  11. 1kg piece beef rump steak, fat trimmed, cubed
  12. 400ml can coconut milk
  13. 2 curry leaves
  14. Steamed Basmati rice, to serve
  15. Pappadums, to serve

The instruction how to make Beef coconut curry

  1. Melt butter in a large heavy-based saucepan over medium heat. Add onions. Cook for 2 minutes or until tender. Add garlic, ginger and spices. Cook, stirring, for 5 minutes.
  2. Add beef. Cook for 2 to 3 minutes or until browned. Add coconut milk, curry leaves, and salt and pepper. Bring to the boil. Cover. Reduce heat to low. Simmer for 1 hour 15 minutes or until meat is tender. Serve with rice and pappadums.
