  1. 1 packet Marie biscuits, crushed
  2. 1 packet glace cherries
  3. 113g (4 oz) copha
  4. 1 can sweetened condensed milk
  5. 3 tbsp shredded coconut
  6. 200g milk chocolate

The instruction how to make Easy Cherry Ripe slice

  1. Line the tin with waxed paper. Overlap the edges, so it will be easy to lift the cherry ripe slice out before cutting.
  2. Put the biscuits in a blender and blend until they are like breadcrumbs.
  3. Chop up the glace cherries.
  4. Melt 84g of copha and set aside.
  5. In a bowl mix crushed biscuits, condensed milk, chopped cherries and coconut. Add semi cooled copha and mix well. Press down firmly in the tin. Set aside.
  6. In a double saucepan melt chocolate and the remaining copha over low heat, stirring continuously.
  7. When completely melted, pour over the cherry ripe slice mixture, and spread evenly.
  8. Chill in refrigerator for until chocolate sets.
  9. When firm, hold the edges of the waxed paper to lift the cherry ripe slice out of the baking pan onto a cutting board.
  10. Cut the cherry ripe slice into squares or triangles, of the size required
