Re-invent the basic biscuit with the delicious addition of coconut and caramel.

The ingredient of Coconut chews

  1. 185g butter, softened
  2. 3/4 cup caster sugar
  3. 1 tsp coconut essence
  4. 1 egg
  5. 2 cups Lighthouse Cake, Biscuit and Pastry plain flour
  6. 1/2 cup shredded coconut
  7. 2/3 cup caramel Top n Fill
  8. Shredded coconut, toasted, to decorate

The instruction how to make Coconut chews

  1. Preheat oven to 180u00b0C/160u00b0C fan-forced. Line 3 baking trays with baking paper.
  2. Using an electric mixer, beat butter, sugar and coconut essence until pale and creamy. Add egg. Beat until combined. Sift flour over butter mixture. Add shredded coconut. Using a wooden spoon, stir to combine.
  3. Roll tablespoons of mixture into balls. Place on trays. Flatten slightly.
  4. Bake for 12 to 15 minutes or until light golden. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely. Spread 1 teaspoon Top n Fill over top of each biscuit. Sprinkle with coconut. Serve.
