A healthy and nutritious Portuguese salmon recipe that is sure to become a weekly BBQ favourite.

The ingredient of Portuguese salmon recipe

  1. 2 x 250g boneless salmon fillet, skin on
  2. Broccolini salad, to serve
  3. Green bean salad, to serve
  4. 1 lemon, cut into quarters, plus extra wedges, to serve
  5. Fresh herbs, to serve
  6. 2 red capsicums
  7. 1 tsp crushed garlic
  8. 1 tsp smoked paprika
  9. 2 tsp sweet paprika
  10. 1/2 tsp ground cumin
  11. 1 tsp ground coriander
  12. 1/2 red onion, finely chopped
  13. 1 long fresh red chilli, seeds removed, finely chopped
  14. 1/2 cup fresh coriander leaves and stalks, finely chopped
  15. 1/2 cup fresh flat-leaf parsley leaves, finely chopped
  16. 2-3 spring onions, trimmed, finely chopped
  17. Juice of 1 lemon
  18. 200ml extra virgin olive oil

The instruction how to make Portuguese salmon recipe

  1. Preheat an enclosed barbecue to 220C.
  2. To make the marinade, place capsicums on the grill and cook for 10 minutes, turning occasionally, until the skin blackens and blisters. Place in a heatproof bowl. Cover with plastic wrap and set aside to sweat for 10 minutes.
  3. Cut capsicums into quarters, peel away skin and discard tops and seeds. Finely dice flesh and place in a bowl. Add garlic, smoked and sweet paprika, cumin, ground coriander, red onion, chilli, coriander, parsley, spring onion and lemon juice. Mix until well combined. Season to taste. Add oil and mix to combine
  4. Place the fish fillets on a tray and spoon marinade over each fillet, spreading until the fish is well covered. Refrigerate for at least one hour or preferably overnight.
  5. Heat barbecue to 160C. Place fish on the grill and close the lid. Barbecue for 8 to 12 minutes or until cooked to your liking.
  6. Serve salmon with salad, extra lemon wedges and fresh herbs.
